Description

Elephant apple powder is a tangy and aromatic spice derived from the dried fruit of the elephant apple tree, also known in Assamese language as “outenga”. The fruit is native to Southeast Asia and is widely used in traditional medicine and culinary applications. The powder is made by drying the pulp of the fruit and grinding it into a fine consistency. It has a distinctive sour and slightly sweet flavour, making it a popular ingredient in various dishes, especially in Indian and Southeast Asian cuisines.

Fish curry with Elephant apple powder

500g fish fillets (Rohu fish)

2 tablespoons elephant apple powder

1 onion, finely chopped

2 tomatoes, chopped

2-3 green chilies slit

1 teaspoon ginger paste

1 teaspoon garlic paste

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

Salt to taste

Fresh coriander leaves for garnish

Instruction:

  1. Wash the fish fillets and marinate them with a pinch of salt and turmeric powder. Keep aside for 10-15 minutes.
  2. Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger paste and garlic paste to the pan. Sauté for a minute until the raw smell disappears.
